Has anybody used any of iFixit's kits to dismantle or repair hard drives?
Would the magnetic bits fuck with the data on the hard drive???

You should pay a professional for data recovery, it's super easy to fuck up and once you do the data is gone forever.

A lot of them need to be repaired in a completely sealed off room. a single bit of dust will destroy the drive. Hard disks are VERY complex nowadays. Go ahead and take them apart, but dont expect it to be working afterwards.

You do not want magnetic tips for a number of projects.
