I have two of these that I successfully swapped sticks and buttons. Soldering will be required for a stick change, buttons are dead easy and require no soldering. If anyone needs assistance navigating the stick mod, I'll do my best to help, but I take no responsibility

drakeonyouOoo, good question. I only have experience with Sanwa and Seimitsu, and I can assure you that they were neither. I also had no purpose for them in current projects, nor room in my parts storage, so they're long gone, otherwise I'd give them a look over. The stick didn't feel too bad, but I just did not enjoy the feeling of the stock buttons

drakeonyouThey are not branded in any way. In my opinion, the buttons are really stiff and don't feel anything like actual Sanwa buttons. Thankfully, the buttons are really easy to swap out with 30mm Sanwa buttons (they are all connected with quick disconnect terminals and you can just pop the button out and connect the same wiring).
The joystick, on the other hand, is really stiff in my opinion. Some people might really like the feel of the stick (it looks similar to a Sanwa JLF, but doesn't feel nearly as light and smooth). If you want to replace the joystick, I will tell you that the connection to the board is with an "American" style connector (here is a link to a replacement wire that includes quick disconnects: https://www.focusattack.com/spare-american-style-187-harness-for-zero-delay-usb-encoder-pcb/) and you can install a Seimitsu LS-32 or LS-40 (not the -01 models that use a 5-pin connector); HOWEVER, the cable that I linked to is not long enough to reach one of the connection points on the joystick. If you don't want to just desolder the existing wiring and resolder them to each post, my recommendation is to buy an extra wire from that link that I posted, cut the wiring apart on two wires, and solder the two wires together to extend the length of the wire. Kind of silly, but I couldn't find quick disconnect parts locally and this was a convenient option.
This is what I have done (Sanwa buttons and a Seimitsu LS-40 all connected with quick disconnects). If you do decide to do this mod, make sure to unplug the ribbon cable at the top of the board to disengage the battery from the rest of controls (be careful, the connector isn't the best and can crack). The only other thing I can say is that the bluetooth connection with the Switch has some noticeable input lag (or at least I notice it). You can, however, run it USB connected to the switch dock and it feels like it has less input lag. I bought this to play Danmaku Unlimited 3 on my switch and am a little sad that the wireless connection has noticeable lag.
I hope all this helps and isn't too much info. There are some guides online, but they usually just solder the existing wiring rather than try to use quick disconnects. If you want pictures, I am more than happy to provide a picture of what I have done. Also, if you decide to do this, please don't hold me responsible if something goes wrong (unlikely as that would be if you disconnect the ribbon cable). This isn't the easiest fightstick that I've modded, but it's far from the worst.

I will mainly use this, if in case I get one, on the PC.
I still don't know what stick and button preference I have since I mainly play at my local arcades and would like to replicate the tekken cabinets (most likely supplied directly by Namco) there and mod the restrictor plate/gate from square to octagon.
I was also wanting to try the OBS-MX buttons (since I am a mechanical keyboard enthusiast) and have a go at fighting games. While I understand the possible disadvantage that the key travel may introduce, I am used to the actuation point of these switches which may or may not be of an advantage for me.

In a review I saw on youtube (https://youtu.be/-6LEPTpX5BY), the reviewer says that it has very low lag with PC, so that might be the best use-case scenario.
There is a good chance that the joystick in the Tekken cabinet is either a Sanwa or Hori fightstick (at least according to sources on Reddit). The Sanwa JLF is very easy to swap gates on; the Seimitsu stick that I'm using doesn't really have an official 8-way gate; however, if you buy a LS-32, there is a third party company that makes a 8-way restrictor gate (https://www.focusattack.com/kowal-ls-32-octopus-octagonal-restrictor-guide/). I don't know if it will fit a LS-40, but I wasn't willing to try it (I should have, it's only $2 USD).
I haven't looked into the MX series, but it's a pretty cool idea. I imagine that they are a little more stiff, but that probably makes them feel more like American-style convex buttons (Happ/IL). From what I've come to understand, it's best to use something that you are familiar with that you like. I mostly play shmups (which, apparently, most Shmup cabinets use Seimitsu joysticks and buttons).
