Not trying to upset people who are interested in these, but in general, I found straight edge steak knives are much nicer to use than serrated edges. It's not like people are buying these for use in the restaurant, you don’t need a steak knife that can still cut when it’s dull, and it’s not like you have hundreds of them, like in the restaurants, so it’s too much trouble to sharpen them anyways. For home use, just touch the straight edge on a kitchen knife sharpener will restore the knife and give you a much more enjoyable steak experience.
