GazelleSous vide, or precision cooking, allows you to cook food to an exact temperature - but never overcooking. You can overcook your food with a crockpot and can't obtain the same level of precision.

sarahatanovaThis, but also a crockpot is good for making a finished "ready to eat" product like a stew or chille. Sousvide is great for making perfectly cooked parts of a meal like your meat and veggies or eggs or custard but then assembly is required to finish up. Not much but they have totally different uses.

GazelleCrock pots are really good BUT Sous Vide offers a far more precise and even cook and ensures that you cannot overcook your food. Also, I read somewhere that Sous Vide's actually use a bit less electricity than Crock Pots.

MuxicaI hate the misnomer that you can't overcook in sousvide. You can 100% overcook. But it's not like you're going from Rare to well done, it's mostly about texture and whats going on with stuff like connective tissue etc.

zndrI'm well aware of that but in order to achieve an overcooked item in Sous Vide, it basically has to be intentional whereas in a crock pot you are incredibly likely to overcook your food.

MuxicaTrue but a lot of people sell sousvide as turn it on before you go to work and come home 10 hours later and your good.
