J.RitchieSharpening the blade involves removing material. That of course includes any paint or coating that is on the cutting edge being sharpened. Eventually the bare metal will be exposed along the cutting edge.

This is the most uncommented upon item I've seen here at Massdrop!
Anyone familiar with these knives? Unlike many items hereabouts, the prices on these appear to be well below the listings at Amazon, et.al. Good knives, do you think, for a kitchen incompetent who nonetheless appreciates a balanced, well-performing blade?
