If I owned this knife I would use it exclusively to slice my jarlsburg. And I WOULD own this lovely but for the fact I can't justify nigh on $300 for a fixed blade. I genuinely wouldn't have much use for it beyond a highly specialized cheese slicer. Nice knife, though. Almost makes me want to go camping. Almost.
