Gravity would fall open by it's own right by simply holding the knife in the correct position, for example, a butterfly knife. Not applicable.
Inertia would be, holding the knife, thrusting along a particular axis and stopping suddenly, only to see the blade continue to move with momentum (under inertia) until it flew open. Not applicable.
Centrifugal force would be flinging it in a circular motion as described above for inertia, OR energy stored within the knife via means such as a spring or torsion bar. Not applicable.
The blade clearly opens because of an opposing force on the wave opener. This is not the same as inertia or centrifugal force, regardless of if it occurs because the user scrapes it against their pant pocket, it is by no means "automatic".
