Crafted by hand in Yoshikin’s factory in Niigata, Japan, the newest addition to the GLOBAL range in 30 years. They feature exclusive blade steel and stainless steel handles you can only get from GLOBAL. The steel, known as Cromova 18, is a blend of chromium, molybdenum, and vanadium that’s ice tempered and hardened to Rockwell 58-59 degrees and sandwiched between two layers of softer SUS410 stainless steel to protect the blade against chipping, rusting and staining. Small pockets are hammered into the blades individually, by hand, resulting in easy food release when cutting and slicing. The handles are a natural extension of the blade. They feature a natural thumb rest for a chef-recommended pinch grip. The handle features 7 signature black dots, which represent 7 Samurai codes of honor and moral principles.
