I'm curious, how does this actually keep the coffee away from the grounds after you press?

The brewing stops because of the micro filter. Once the coffee (or tea) is pressed, the finished drink is trapped in the drinking vessel while the grounds (or leaves) are trapped below the filter. Liquid does not flow through the filter unless pressure is being applied because the holes are so tiny, so any type of brewing (or steeping) essentially stops after being pressed. Yay science!
