Is there any avenue for buying the case separately? I have a Pok3r II and the aluminum case looks awesome.

Where is the option to choose 2u shift vs. 2.25u shift plates?

They aren't. Look at the pictures, only a standard stagger of the bottom alpha row is supported. Layout 5 would not be supported by that plate. See @badawat comments below.

JoshimitsuAccording to Kbdfans, there are two type of plates (2u shift / 2.25u shift) and it should be selected. Certainly, Layout 5 would not be supported. https://kbdfans.com/products/dz60-cnc-aluminum-plate

Question about the July 2019 run (case + plate + PCB): the description only mentions "PCB w/ USB-C", could you please provide a more explicit description of the PCB? Is that a DZ60 rev 3.0?

Just FYI, if you're a complete novice (like I am) and the kit comes incomplete (like mine, and most others did) the stabilizers you'll need are PCB mount as the plate that I picked doesn't support plate-mounted. Which is great, as it took 10 weeks for the plate-mount ones I ordered to arrive...
