The clunky full bolster extending to the heel of the blade disqualifies these knives for me. Makes it nearly impossible to sharpen the full length of the blade.... And, I like Laquiole folding knives.

Tried to search what Sandvik Stainless Steel compositions are. They could be either, 12C27 or 12C27M. https://www.materials.sandvik/en/products/strip-steel/strip-products/knife-steel/sandvik-knife-steels/ I would guess that they are the higher carbon 12C27 -which is a bit higher HRC (54-61)- but still a chromium steel that resists patina.

This is the closet I could find but it doesn’t list specifics. Neither does the manufacturer website... https://www.williams-sonoma.com/m/products/laguiole-en-aubrac-6-piece-knife-set-with-magnetic-block/

Agreed with the comment below - but just to lend a voice: Can you tell us the Rockwell hardness, manufacturing details, and blade composition? Thanks!

They look pretty, but I don't see any detail about the blade itself (hardness, materials, etc)
