Why are these knives so expensive? The knives on Ferrum Forge's website go for 500+. Even @ 125 dollars, what makes this knife stand out from a 25-60 dollar MMP, Kershaw, etc?

GoKartMozartYou mean inexpensive? This is built by WE, a high-midrange Chinese manufacturer that's pretty highly regarded. They started as an OEM, then branched into in-house designs. They currently make knives for VDK and Todd Begg, as well as this collaboration. Their own knives are between $100 and $300ish. They have a new collaboration with Elijah Isham (Isham Bladeworks) that was the buzz of Bladeshow 2017. Put another way, I own Ferrum Forge and I own WE. IMO the build and action of the better WE knives is on par if not superior, even with FF's HRD to adjust the detent.
Typically, a Kershaw knife will have speedsafe, so it's spring assisted. There's something satisfying with straightforward manual flippers, using ceramic ball bearings. These are far more comparable to a Zero Tolerance in that regard. Also, the lower end knives tend to be G10 scales with SS liners & liner lock, not full Ti & framelock - and they certainly don't use S35VN steel for the blade. On paper, this is basically a $200+ knife.

GoKartMozartWhen you collect things you begin to understand what makes one thing more expensive than others. Those things often are components, designer, brand, demand, and where they are manufactured. It's the same thing with knives. Clutch_Cargo summed it up for this knife and the amount of people who joined this drop says a lot. The knife "collectors" understand what is being offered here and feel they are missing out if they don't join the drop. I think it is a unique offering (designer, styling, manufacture).

GoKartMozartEven at the base level, you're not going to find a $25-60 knife with titanium scales and S35VN blade. While I do own quite a few Kershaw myself as they are good budget knives, there is a reason Zero Tolerance (which is made by kershaw) is a pretty noticeable jump in price by comparison; only some of which is due to material differences.
