I have two Matfer frying pans as well as a couple from Turk. I personally prefer the Turk pans as they seem to better retain the seasoning. That being said, these are great pans that I use for nearly everything except recipes with high acidity.

Just received one of their carbon steel pans, since it was my first purchase from Matfer. I was really eyeing the paella pans but didn't want to buy two products from one manufacturer before seeing one in hand. The pan is so nice that I requested the drop and will buy at least two if they open it again!

You can use a towel in hand and then use the loop handle to shake and rock the food around

The bottom of a paella pan is much flatter than the bottom of a flat-bottomed or curved bottom wok, and the sides are much shorter. It would make a big difference in heat distribution.

I like it but I might just wait until Darto does another sale for the US. I have their pans for all other things and they are amazing and single piece construction. Wish Massdrop would work something out with them since they're in Argentina.

drturkletonIt's kind of random, they've done standard free international shipping deals near major purchasing holidays in the States. They did some sort of b-stock version for Argentina only this year in August.
I've seen a couple of individual item sales but they don't usually throw in free international shipping during those times.
