There are plenty of things I make that require whisking over heat, but the one silicone-coated whisk I have is not really up to the task for anything other than small or thin things. Hence my looking for something more substantial that won't also jack up the enamel of my Dutch oven.

SamtrzI haven't had occasion to use a metal whisk on my dutch ovens, but I wouldn't think twice on a Staub with the dark enameling. On a the lighter colored Le Creuset enamel, I'd be cautious using any metal utensil with a sharp edge, but since there really aren't any edges to dig in to the surface on a whisk, I'd just go easy. Still, as you mention, there are plenty of coated whisks out there right?

adding in shipping, this is either the same price or only a few dollars less than from JB Prince, a major restaurant supplier in NYC and, in my experience, great to work with.

I suggest anyone anyone interested in these also take a look at vollrath whisks. I used them for years in and the only issue I have ever seen them have is the handle melting because of cooks leaving them over the flame on the stove. Purple handles are thinner steel and the green are thicker, they are heat resistant to 475F, nsf certified and a killer price to performance product. 18in French whip is less than $14 shipped

Just an FYI these are pretty large. The preview images make the 10" look tiny, but actually the 12" is huge. I got the 12" and it's definitely bigger than I thought, but I love it. Super solid, makes work easy and can tell it's very high quality.

Has anyone used these before? I've gone through a LOT of whisks in my time, and they're usually pretty poorly constructed. I end up buying most of my stuff from restaurant suppliers these days due to the higher reliability, but even restaurant whisks bite the dust eventually. I'd be interested in these if the handles are actually formed around the wires, and the wires go back at least most of the way to the end of the handle.
