Note to everyone with an induction cooktop (like me, sadly). You'll need an added "induction interface" disk if you want this pan to work on your stovetops . Some go for $20 on Amazon, but the Mauviel-branded ones go for an extra $100. I'd be in if I had a different stovetop.

From my experience with 10-12" pans the 1.5mm thickness isn't really fantastic, too thin. I'd be all over the Mauviel 6504.30 11.8" w/ cast iron handle and 2.5mm copper thickness.

KabooseYou're right, I'd be worried about the bottom bowing with my electric stove top, that pan would become nearly useless after bowing for me. I need my pans to stay flat. Too bad they are not offering the 2.5mm thick pan.

Why is this clean by hand? Is it not dishwasher safe? Will the pan be ruined if i put it in the dishwasher, or will it just make the copper less shiny?
I don't care whether the copper is shiny, I just want even heat spread. Will the metals separate if I put this in the dishwasher?
Will there be significant galvanic corrosion if I put this in the dishwasher (2 dissimilar metals touching in an moving electrolytic fluid)?

petkus331It's the M150 series. This is cookware marketed towards people who buy copper for decoration. Imagine how many people would sue Mauviel if they stuck their copper in the dishwasher and found out that copper changes color when it's exposed to chemicals and high temperatures. Much like the dire warnings about chipping Shun knives, take this stuff with a grain of salt.

sockpuppyCorrection: The Williams Sonoma versions of the Mauviel pans are for people who buy copper for decoration (they are 0.5mm copper plated). These are entry-level copper for people who aren't able to afford a 250 set.
