The copper exterior heats evenly and much faster than other metals. The stainless steel interior preserves the taste and nutritional qualities of the food. As far as shape, the pan has high enough sides to prevent splatters, but low enough to reach into with tongs. Pair that with a cast stainless steel, stay-cool, iron-electroplated handle and you’ve got a pan that will stay hot without overheating at the handle section.
