You don’t typically associate chainmail with roasting meats, but here’s a reason you should. Instead of using tinfoil, this 15.7-by-15.7-inch piece of steel armor drapes right over top of your roast, preserving flavor and moisture and preventing shrinking. If you’re basting meat with the juices, you can pour them directly on top of the chainmail—no need to lift any tinfoil and replace it afterwards. When you’re done cooking, just remove it with a fork and pop it right in the dishwasher. You can even use it to blind bake pastries instead of using baking beans.
