I want to try this out but the 1-pin MMCX connector feels archaic to me.

BigBoyLokiNot at all. There are a ton of boutique IEM companies who use MMCX, ALO, LZ, Ostry, RHA, etc. I prefer MMCX to 2-pin, which is really the only other alternative, other than proprietary, mini XLR (which may not necessarily be proprietary) or mini 2pole jacks in HPs, not IEMs.

ILoveStuffI thought MMCX were better connections? Is that not true?

Well "Better" is relative right? There are differences which have advantages/disadvantages. I personally prefer mmcx due to it's rotational ability. But some mmcx implementations leave much to be desired, so it can come down to manufacturers implementation and manufacturing, QA.

BigBoyLokiLike ILoveStuff said there are tons of nice quality cables for good prices via the web. I own these, earsonics sm64, Audiofly AF1120(their totl universal), and some cheaper stuff as well chi-fi and budget IEMs. The KC06 were very good budget solution and if the KC07 keeps up with the quality for price theme that it's predecessor did it will be a very competitive IEM. I think there are worse chances out there for purchases. But I also know if you are concerned you could always get the primo 8 for 98 $ like new at places which a fantastic deal as well. There are many good to great options at the 100-200 prices level in comparison to a couple years ago.
