QUESTION!: If I want to get the OEM PBT Caps (Cherry only) for the zealios switches, couldn't I just order these same white ones off this site at any time? http://ortholinearkeyboards.com/planck/oem-keycaps Should I get the DSA PBT caps instead since I don't see those available online anywhere?
Yes to your first question (there are also tons of other places to get more custom/special keycaps). The main thing with the DSA keycaps is that they are all the same height, regardless of which row, which makes it more similar to most modern laptop keyboards (like the MacBook air/pro). However, there is a spherical "dish" in each key to help your fingers stay centered, whereas many chiclet laptop keys are flat (or have very minimal dish).
If you don't think you want different row heights, then you should definitely consider the DSA caps. I specifically went for the DSA caps this round because I'm considering buying a nicer DSA custom set, but I've never actually used DSA and I figure this is a low cost of entry to try a handful of caps (19$). Would even be possible to mount them on my other keyboards.
You mentioned in a different comment that you have a pok3r. I believe the default keycaps profile for the pok3r is "OEM," so if you aren't a fan of your row-to-row typing experience, maybe DSA is right for you :)
(you can get a bunch of white blank, or other color DSA caps here: http://pimpmykeyboard.com/dsa-pbt-abs-blank-keycap-sets/)
