Is it okay to use a titanium spoon to stir in that pot?
Also, because of the non-stick coating, I feel compelled to carry the bowl (which I don't really need) just to protect the coating from the canister etc. (I suppose I could use a bandanna)
Am I being overly protective? Is it tougher than I think?
chuggerI don't think you're being overly protective; you are paying for that coating so why not protect it ? When I couldn't find my aluminum spoon right before a big trip I bought a GSI plastic one with silicon over the end. It's a hair heavier than aluminum but the silicon is treated safe and has the added benefit of doubling as a spatula and scraper for cleaning. I actually like it more than my old aluminum one now (which I still haven't found :( ) For nesting treated pots I use my camp towel - a bandana would be just as effective in protecting it, but I like to carry a camp towel anyhow. For solo kits where you place a canister inside the pot I would recommend a bandana or one that's cut to shape to cover the fuel canister at least.

EverythingIsBetterOutdoorsI ended up getting Humangear utensils: https://www.amazon.com/gp/product/B00GTXC1S6
In a way I don't like that the pot is thicker/taller due to the heatsink but it is efficient, distributes heat better than my titanium, and refuses to stick.
I like that I can do Knorr Alfredo without it thickening up and sticking to the bottom.
Bob's Red Mill 10 grain cereal that I'd end up scrapping off the bottom of my titanium doesn't stick and wipes right out. (Steel cut oats aren't a problem even in my titanium)
The same with the mixed dry beans and chicken that I tried to simmer outside in the wind the other day. Practically boiled it over several times, and came close to boiling dry a time or two. It's a wonder I didn't burn it. (Cooked 1 1/2 hours and I didn't watch it very well) Practically rinsed clean. I was surprised, and impressed.
Works for bannock and egg too.
If I carry it, I'll probably take the bowl too. Make a nice water bowl for my dog.

chuggerI use a buff to keep the canister wrapped up in mine. Mainly so it doesn't rattle around when I'm on the bike.
Love this set - I've had it for a few years and use it frequently on moto and bicycle overnights.

chuggerI have used a titanium spoon and haven't had a problem, but then again I am not scraping the pan. I didn't think I was going to use the bowl either, but I have been using it.
