ZDP-189 is a specialty steel typically reserved for high-end pocket knives. Here it plays the starring role in a Western-style kitchen knife inspired by Japanese tradition. Made up of 3 percent carbon and nearly 20 percent chromium, the steel will stay sharp cut after cut, but it won’t corrode or rust when put to the test (as long as you clean and dry it properly). The steel is laminated with multiple layers, and the outer layers protect the core steel from corrosion and other external factors. These outer layers also make the knife less prone to breaking, compared to a mono steel clad. The handle, made from strong walnut wood, has an octagonal shape for a comfy hold. The blade’s shape lends itself to fast chopping, but the gently designed belly is suitable for long and short cuts, too. (The wooden sheath is not included this time around.)
