Agree on the quality of Japanese Cutlery. However the Gyuto blades offered here have less of a belly than the more common santoku blades. I find the Santoku WAY more comfortable to hold and cut with. As the angle feels more natural. The more aggressive the angle of the blade the less I like it for vegetables. However it may provide greater precision when working with meat especially if it has bones.
