Can someone explain the difference between these and the MDR100x?

GreenLEDI have a pair of the 1000xm2 and they're basically just better sound quality and better NC as well as ambient sound features and touch controls on the earcup. These are still decent headphones and a lot cheaper than the 1000x's. If you have the money though, I would highly recommend waiting for a 1000xm2 drop because they are better.
