I am very sorry for your problems with the clock mechanisms being loose, I have attached some photos with some fixes that I hope will solve all of your problems.
#1 - This is the proper assembly of the clock mechanism, notice how all of the hands are stiff and do not hang or swing in place. #2 - If the minute hand is loose it is most likely because the brass nut has come loose during shipping, it can be frustrating getting it threaded correctly because the threads are so fine. have patience and when the nut is snug enough there shouldn't be any play in the hand. #3 - The hour hand is an easy fix, it just sits snuggly onto the white plastic piece, if it is loose you can take your fingernails or a flat instrument like a small screwdriver or butterknife to push the hand back onto the plastic. you shouldn't have to force it, just snug should be enough to keep it on when it is not in transit.
please let me know if this fixes your problems or if you need any further assistance!

InkedandScreened-SupportSo the hour hand is not actually secured by anything than just snapping into that piece of plastic? That's not a very good design, as it will easily come loose, and there's no good way of re-attaching it accurately other than lining up all 3 hands at one of the cardinal directions and then re-adjusting the time. Mine arrived loose and made me think it was a defective unit.
GokieKSyes I agree it is not the best design however this seems to be the standard as all the test mechanisms I purchased were styled the same. you could try using a little dab of glue to make sure it stays in place
