LQDForceMost of those chef knives are for baby hands. Not saying that they are not reasonably priced just saying most of us will hit our knuckles on the cutting board.

PgomezIt's a matter of preference. I added most models in 8" because of this. personally, i use 10.5" (270mm) but I guess for home use a 9.5" is easier.
Anyway, if you're more into the shape of a western knife, with more clearance and belly - can't go wrong with a Messermeister https://www.amazon.com/Messermeister-Meridian-Elite-Chefs-8-Inch/dp/B00004XS0T

LQDForceI will agree that it is a matter of preference. And I actually dislike the shape of western knives. Due to having large hands I've become accustomed to a "pinch grip" when using my chefs knife. I tend to look for a chefs knife with a deeper belly for knuckle clearance & comfortable ergonomics for the rest of my hand. Oh & I have no problem with 8" blades. I usually work with an 8.5" & 6".

Pgomezhehe , i get it :) don't want to sound like a weeaboo, but have u ever tried a Nakiri ? i really think it would suit your preference.
Also, if you hate the feel of german knives, but still like the shape and belly - how about a Western Deba ?

LQDForceNo not at all. I'm always open to suggestions. I have actually tried a Nakiri & I do like them, although I have yet to buy one. The last one I used was a Wusthof but I wasn't a big fan of the handle. I did use a Shun while in school with the round handle which I liked a lot more!

PgomezThose actually look very similar to the Tojiros, they use the same VG10 Core, and 33 fold damascus as opposed to the 37 folds Tojiro uses, but that is strictly cosmetic.
If you don't mind taking the time and have the appropriate whetstones to sharpen your own knives, those are also actually not bad, they have a steel bolster so they are comparable in price to the more expensive Tojiro damascus range.
I would definitely consider the Kanetsugus if I couldn't get Tojiros, but with equal availability, I'd go with Tojiros again. :D
