Togiharu is the house brand of Korin, a New York–based cutlery company with the widest selection of Japanese Knives in the world. These knives, designed for professional and in-home use, feature slim blades and ergonomic handles to help breeze through cutting tasks. The handles are easy to clean and resistant to bacteria that can build up in messy kitchens. To prevent corrosion and dulling, they require hand washing. See below for more details.

Which Knife Is Which?

The main blade is the 3.3-inch paring knife, which features an easy-to-sharpen AUS-8 blade and a composite wood handle. Use it for cutting garnishes, removing seeds and stems, and peeling. Up next is the 7-inch Santoku, armed with an AUS-10 blade (the top of the AUS line of steels). This style is great for chopping large amounts of veggies and transporting cut food to pans and plates. Last but not least, the 8.2-inch Gyutou, also made with AUS-10, is fit for slicing large cuts of poultry and red meat, as well as rock chopping through tough foods.
