I bought one in the last drop. Honestly... it's by far the best sharpening system in its range. It's even better than the expensive models. 1stmeridian listens to customers and is speedy and attentive with his answers and advice. Here's a hint: If you use an iPhone, it has a angle finder built in (find the compass and swipe left) and you can use this to set the sharpening angle.
DommHow would you use the angle finder to set the ViperSharp? I ordered a digital one, not knowing the iPhone could do it, but I worry about getting the angle right, especially on the Japanese chef knives I have. I am new to sharpening, and don't want to screw up if possible!
siddharthaThe angle finder is probably far superior to using the iphone. I have japanese knives the are sharpened at 15º. I placed my iPhone in the same position as you would for the angle finder and adujusted the angle of the rod. I recalibrate when I turn the knife over... just to be sure. With the ViperSharp it is pretty hard to screw up... but I's stick with the angle finder if you have ordered one.
siddharthaIt's pretty straight forward. Set zero on the flat surface you are using and then set it on top of the stone carriage. Adjust until it shows your desired angle and tighten the thumb screw. There are several YouTube videos showing it. Check it when switching sides and when changing stones if desired.

siddharthaTake a sharpie, color the edge of the knife black, mount it into the sharpener, approximate the angle and use the leather strop - run it along the edge - if it only removed the marker from the very tip of the knife, sharpen the angle until it rubs all of the marker off the edge.
siddharthaPractice on an old kitchen knife first. If you have a file, dull the blade then sharpen in the Viper... you'll probably need an angle of 20-30º to get a good edge on cheap stainless. Check with the manufacturer of your good knives to see what angle they recommend. Global knives are 12-15º from memory.
