Any alternative sharpeners that don't need multiple setups for 7" kitchen knives? I would think all they need is a longer rod.

obiwankenobiVipersharp will do 7" no problem. The rod needs to be longer and preferably the stone as well for longer knives (10"-12"). The latest rod measurements for the ViperSharp is 8". Add that to the 4" of stone and the rod could technically reach up to perhaps 11.75 away from the bearing. That offers a pretty wide range for sharpening.
