I purchased the 8 inch Chefs Knife and cannot describe how happy I am with it. Balance is great and the finish is beautiful or it was until I let my mom use it and she cleaned it with a scotch brite pad ;(. All's good though because that has no effect on the usefulness of the blade. I have owned it for around a year now and will be taking it to sharpened for the first time soon. Maintaining it with the suggested hone type will keep the edge for a year (depending on how often you use the knife). My only complaint is like with many Japanese chef knives is that the blade is fairly thin so while its good for filleting its not the greatest for breaking down a bird.
I baught this knife a few months ago and been using it daily in a professional kitchen. I love how the knife handles and keeps an edge.
My coworkwers reguarly ask me about the nice knife I have because of the nice handle.
I bought the 8" chef and it's great! Sharpness lasts a long time and I just sharpened it again, it was easy. In comparison the massdrop apogee one didnt last as long. It also sharpened well but it's heavier and bigger. If I had to do it again I would likely buy more of the VG Zen knifes instead of the massdrop x apogee one.
rac_sword2So, I posted the review, made the comment to my wife. Then she tells me that after I sharpened the Massdrop X Apogee one she likes it the best. It glides through the food now and it's heavy enough to help slicing down veggies. I guess that means you just need to sharpen it and not review it with the manufacturer's sharpness. Full disclosure, I dont believe myself to be more than at mediocre skill sharpening knives. That's how bad it was from factory and how good this knives both are, just a matter of taste. I still would have bought more of the Zen :)
