FWIW, I bought 3 of these (green, red, blue) several years back, mainly to raise slurry on coticule stones. Just thinking out loud but 600 grit for knife sharpening duties is a bit coarse for a final edge, even for a pocket knife but that's just me. I would use 600 to rid the edge of nicks if they weren't too deep, go coarser for deeper nicks, gouges, then finish with 1200
That said, I'm a huge fan of keeping my edges in good shape, not using...

Obscenely sharp. Start there, if you're looking for a flexible knife to fillet, then go with a fillet knife. If you're not filleting it, virtually any kitchen knife larger than paring should be fine, provided its sharp. Grab a simple guided sharpener such as the DMT or Lansky and go to town making everything razor blade sharp, and have at it.

This goes for Cferrer and behr95 which seem to have similar questions. Arkansas oil stones aren't the best tool to sharpen high carbon steel like S35VN or M390, sadly... What's recommended is diamond sharpener like DMT duosharp and the such. To get a nice polished edge, make sure to get the proper level of grit (Low/high or low/medium/high). And if you're new to sharpening, I suggest practicing on something other than expensive knives before...

I only sharpen freehand. I enjoy doing it and I find it rewarding. It's also a valuable skill from a practical standpoint as you don't need to have an entire guided sharpening system/contraption setup. All you need for hand sharpening is your 'stones' and blade, which means you can do it basically anywhere, which primarily means not at your house where the guided system is. Well, anything with grit will shape/profile eventually, but this would be far from the right tool for that task. This is a touch up field stone, not a primary sharpener. It cuts, but as noted, not as fast or efficient as a high end bench stone counterpart like Shapton or Atoma. It's on par with similar pocket offerings from DMT or Spyderco and is a quality piece. You should really be doing everything you can to avoid needing the 800 side...

I would suggest offering EZE-LAP stones with your system. The combination of mono and polycrystalline diamonds make them a good performer for a long time and they're as good as DMT hones for considerably less. I'd like to believe that EZE-LAP would consider a partnership or at least a deal in order to put them on the market more than they already are.
