I'm with you. I have blades in XHP, 7Cr, 440C, Elmax, Crumwear, VG-10, and some nameless "stainless" steels on SAKs and the like. S30V is fine, works as well for me as any of the "super" steels I've used. For cutting up an apple or cutting tape (you know, the type of shit we mostly use our knives for) it's great. I'm not a CATRA machine I just want need to cut this candy bar in half.
