Scones are one of my familie's favorite foods for breakfast and for snacks. My family likes it more on the crispy as well. If you brush melted butter over the top of the scones half way through baking, you will have a really nice level of crispiness. I have also played around with using a little less butter in the actual recipe which helps balance the crispness to moist ratio as well.

Susan I love a good scone. We used to make a cheddar bacon at the restaurant I used to work at. Will be tough to dig up the recipe, but it did end up fairly balanced in terms of crispness to moist ratio (I don't have a better set of words to describe that), I tend to prefer it less moist so that it pairs well with a hot bevvie. What are your tips for creating that balance?
