In simple words, can you tell me how much better it is making it in a dutch oven? It LOOKS delicious, but I have never cooked anything in one.

phila58I use a dry rub of black pepper salt garlic and cyan pepper with a dash of mesquite. I sear the roast in the pot it's in with olive oil. Depending on how thick the roast is determines the time per side, this one I did it on med/high heat for 2 to 3 min per side then I put butter onions and chopped garlic cloves on top and carrots around it and put the lid on then place into a pre heated oven at 325° to 350°. Cook until the internal temp is at 125° (approx 35 min) , I like my steak on the rare side plus it will continue cooking while it rests for 10 min ( This roast went up to 140° while it rested ) if I don't have vegetables in with it I'll take the lid off half way through to get a crispy crust on the roast. I've also done the searing in the oven. I'll preheat oven and pot to 450° and place the roast in uncovered for 15 min then turn down oven to 275° to 300° for another 20 to 40 min depending on roast.

DougFLA123It's not my favorite cut but the butcher had it on sale for $1.99/lb. And it was trimmed nicely. I have found the the market pre packed meat seems to always have a lot of fat hidden under the cut.
