Masazumi Japanese Kitchen Knives sharpening

more_vert
Hello fellow Blade enthusiasts,
Does anyone know if these blades have a bevel to sharpen as well as an edge? The image that came with was unclear and all text is in Japanese which I am completely ignorant of. (Sadly).
Thanks
Richard

the question is whether or not the flat side of the blade extends all the way to the edge (a common edge style in sushi and finnish knives) or if there is a bevel on the edge as is common with most western kitchen knives. Looking at the pictures, it looks like it does have a single bevel, given it's Japanese origins, it's probably around 30-degrees (15-degrees on each side). (edited for grammar)

Hey Richard - I'm not quite sure what you are asking, do you mind clarifying and maybe I can help.

ISKYes, is the blade just edged or is there a bevel? This will change how one sharpens it Thanks richard
