It's been a while since I last posted. It's a blistering hot summer here in Australia, and yet I felt like cooking some soup!

Diced up 2 yellow onions

Roughly chopped up about a kilo of mushrooms, you can use any mushroom of choice. For an extra kick, rehydrate some dried shitake mushrooms and add them in!

At the bottom of my pot, I melted some butter, about 50g and started to sweat my onions.

I added in some chopped up thyme and garlic, and continued sweating my onions till they were translucent.

Into the pot, all the mushrooms went, and another 50g of butter.

This part takes a while, i really cook down the mushrooms till all of the water has dried out. I really wanna try and get as much flavor as possible.

Once the mushrooms and onion mixted is pretty much caramelized, I added 6 cups of home made chicken stock and a cup of heavy cream. If you wanna be fancy, you can use some red wine or any other liquid of choice.

Finally, I blended it up in batches. I did not blend it for too long, as i wanted it to have some chunks and a lil texture. I don't have an immersion blender, and am wondering if it would work so much better. Topped off with a drizzle of cream and some freshly cracked pepper.

So as everyone is busy celebrating christmas and enjoying festivities. I decided to cook dinner for my family this year. 1) Prawns in a prawn, garlic and dill oil.

There were other foods like bread, potato salads, veg, but i'll give it a miss. Ps. Is there a name for the prawn dish i made? I've no idea and made it on the fly

MarcusKWow, you made even more food than I did! We had a couple of vegetarians in the house so I couldn't go all in on the protein like you did. I should have taken some photos. Did a beef tenderloin on the grill, some bone in chicken marinated overnight, butternut squash and ricotta stuffed shells, crispy brussels with pancetta (served on side), leafy green salad, two kinds of risotto (creamy parm and chicken stock, super rich mushroom) and a lemon poppy seed bundt for dessert. Plus all the wine. I need to be more diligent about snapping some photos to share.

Today's lunch (and tomorrow's...and a few down the road as well). A 12 lb. brisket, fresh off the smoker. Always best when the brisket comes from the local meat market.

So I'm a single 40 yo Navy veteran and have decided to start cooking and baking for myself. Started my own sourdough starter and this is the first loaf. It was sour, tasted good and the overall expansion of the dough was also good ( it over doubled in size ) . My only complaint was I didn't get the big air bubbles inside like I see in artisan breads. I'm baking in a cast iron Dutch oven.

Made a very lazy sweet and sour pork. The sauce wasn't sour at all until I let it mix with the veggies. Turned out better than expected.
