I have a D5200 because I didn't want to go all out if I didn't like it. It's a very solid camera and if you get it used on ebay like I did, you can afford some nicer lenses for it which really make a difference. I use a 35mm 1.8g for my EDC lens but I also have a 70-300 for distance. My personal favorite lens is my 85mm 1.8g. I'll attach some pictures below but really a cheaper body with good lenses can make all the difference.

mwoods1664That's another option, lower body and better lens, but I wouldn't skimp out on the body too much. Similar results like that can be achieved with any DSLR lens. If that route is taken, a 750D with a Sigma 35mm 1.4 art or 18-35mm 1.8 are solid choices. The Sigma 17-50mm f2.8 is a more versatile lens to consider if the more focal length is wanted.

I'm guessing you'll need a lens too and not just the body. Look at the Canon 80D if you budget allows, very solid all rounder. The Fuji XT20 kit, Canon M5, Nikon D7200 are also solid choices. These cameras take you to the near end of your budget but if you're looking to have a budget with a keen mindset at this range, you may aswell get a solid choice that will keep you in the middle ground.
