It's easy to finish the top of a quilt in a weekend, and there are lots of online resources with patterns. What you need to spend time on in learning how to baste and do the binding and quilting. Check to see if a local adult education center has any classes! There might be guilds in your neighborhood, that might have a smaller group to help. Or check and see if there is a Quilts for Kids chapter or another charity group in your area. They usually have kits set up and will help with learning the steps you need to finish a quilt.
