I have two that I alternate, depending on the trip: (1) a Gerber 450. Like most of my gear, the choice was due to price (free, I found it years ago), not necessarily just weight. It does the job, and is substantial enough that, don't laugh, I feel like I could fight off a mountain lion if need be. (2) A $1.00 paring knife from the local grocery store. I haven't weighed it, but it is tiny, has a plastic handle, and is likely less than an ounce. The paring knife is a great cheap and light option, although you can't do much else with it, i.e. cut rope, unscrew an MSR stove with the blade, etc.
