It's not absolutely compulsory to use UK keyboards in British English speaking countries. You can use any of the physical layouts which are ANSI, ISO and JIS, then change the keymap in your operating system to an International English option. This does mean compromising on a few conveniences, mainly the £ would no longer be on the 3 key. Perfectly understandable if that is unappealing and you do want the standard British setup, but just wanted to be sure you know that's not the only choice.
JIS is Japan mainly, ANSI is most widely used and ISO, which is what your used to, is the second most widely used standard. So you're looking for an ISO layout keyboard with a UK language keyset.

Some keyboard PCBs for self-assembly are flexible and allow you to install the switches in either ISO or ANSI configurations, but others are restricted to one or the other. You need to be sure of the spec before you checkout. If you're not sure about a particular self assembly kit or PCB, ask on the drop and someone will tell you the answer.
If you want a complete keyboard specifically for the normal British standard, just make sure you're buying ISO layout and choose a keyset that includes the UK language options.
