I've been pretty happy with stock blue, with kits I put Greens in on the space bar, Also, I'll put the max number of keys on a PCB, I don't care if it's not standard or ISO any more.
If I can, I'll change the software so that caps is gone and replaced with control, the former control key can be a layer key or something. I'll also do space cadet shift keys and mouse control on a layer if the software support it.

Depends on how far you want to go I suppose. A lot of people are content to stop at their keycaps, others will tear down their whole board, change their springs, lube their switches and then put it back together. I personally draw the line at desoldering and resoldering everything. If the level of customization I'm looking for comes to that I usually just build a new board.
