The headphones you'll want depend highly on what kind of gaming you do. If you want immersive explosions and such, then something with a heavier signature works. If you're playing competitive FPS, then you want to hone in on the midrange and positional audio cues and ditch the bass which is will obscure your direction sense (the open backed Audio Technica AD-series are typically popular here).
Commenting on some of the suggestions below: - Senn HD598 - great overall headphone, potentially muddy if your amp has a high output impedance - AKG K7xx - honestly get the K612, to my ears it's better overall plus typically an easier load to drive - Fidelio X2 - fun for explosions, not my first choice for positional cues

ArmaegisI agree with all of these suggestions, especially the Audio Technica AD series headphones, they have massive soundstage and are used in Audio Technica's gaming headset line too (which means they trust it to do a good job for that too).
I'm going to chime in and add the Philips SHP9500 and V-Moda BoomPro mic cable. It's the setup I'm using and I find it to be plenty good for gaming and music listening alike, they're also fairly inexpensive too (and I run it without an amp, still sounds fine)

DoongleYeah the SHPs with the VModa mic is the best budget buy I've seen. I use it and I think it's great. The best set dedicated for gaming however would be the Sennheiser PC37x.
