Lean Turkey Breakfast Casserole
· 1 pound Jennie-o Turkey Breakfast Sausage roll · 10 eggs · 1 medium sweet potato · ½ large onion (chopped) · One cup sliced baby bell mushrooms · Salt to taste · 1 tsp black pepper · 1.5 tsp chilies powder · ½ tsp parsley · Olive oil · ½ cup chicken broth · 9in by 9in baking dish (buttered sides and bottom)
Peel and cube sweet potato. Bake @ 350 for 30 minutes. While sweet potato is cooking: In large stove top pan, saute (medium heat) onion and mushrooms in olive oil until onions are tender and clear. Once finished, push onion/mushroom mix to one side of pan. Add ground turkey in other side of pan, using a spatula, chop up the turkey into small bite sizes. Add chicken broth.. Stir turkey as needed. Cook until done. Once turkey is cooked, mix the onions and turkey together in pan and add seasonings and salt. Simmer on low for about 10 minutes.
While turkey mix is on low simmer, break 10 eggs into large mixing bowl and beat. Add sweet potato cubes to egg mix.. Line bottom of buttered baking dish with a little over half of the turkey mix. Pour all of the egg/sweet potato mix on top. Spoon remaining turkey mix on top of egg mix. Do not add cooked down juice from turkey mix. Bake @350 for 30 to 35 minutes. Enjoy..
