No Fuss Pasta Carbonara:
This is super easy to make traditional Pasta Carbonara recipe. You need only 3 ingredients next to your pasta. Here we go:
Serves 2 people: Pasta: 250 grams / 0.5 pounds (ideally Spaghetti or Tagliatelle but any pasta will do) long pastas are best as the sauce will coat them nicely. Bacon: 100 grams / 0.2 pounds (or more if you fancy). Get a big piece of bacon and cut it in small cubes or prisms. (original recipe is with Pancetta but that might be difficult to find based on your location) Eggs: 4 yolks + 1 whole egg. (works with 3+1 or just 4 yolks as well) Cheese: ideally Parmesan, Grana Padano or Pecorino but you can use any hard cheese. 2-3 table spoons
How to make it:
Start heating up your pasta water. Add about 2 tea spoons of salt. Heat up a large pan or a wok for a few minutes. If you don't have a non stick pan, add a table spoon of oil. Add the bacon chunks and let them fry. Stir every couple of minutes so it cooks evenly.
While the bacon is cooking, mix the egg yolks together then grate the cheese in (about 2-3 table spoons) Add some ground pepper and salt (max 1 tea spoon of salt as the bacon is salty as well)
Add your pasta to the water once it's boiling.
Your bacon should be about ready by now. It's ready when it has released quite a lot of oil and has started changing color to a golden brown. (it will probably also start to pop in the pan)
Take the bacon off the heat and let it rest in the pan. Note that you will finish the dish in the pan so it's important to have a large one.
Once your pasta is done, transfer it quickly and directly in the pan with the bacon (using kitchen tongs works best as you will want to transfer a few drops of the pasta water as well)
After you've added the hot pasta to the bacon pan, quickly add your egg mixture inside and stir constantly. The hot pastas will cook the egg so stirring constantly will ensure that you don't end up with scrambled eggs on your pasta. If needed, add a table spoon of pasta water to thin the sauce.
Plate up and grate some more cheese on top and maybe some black pepper.
Pro tip 1: Adding some Red Pepper on top will enhance the flavour. Pro tip 2: Also works great with truffles or truffle oil when serving
