what are some good low carb dinner ideas?

I'm trying to cut down on carbs and have successfully done so for both my breakfast and lunches but end up struggling to figure out what to make for dinner. I am also often cooking dinner for my two roommates as well and we often resort to past or rice accompanying our protein and vegetables. We usually have chicken, beef, lamb and some Italian pork sausages for our proteins. What are some ideas to cut down on the generic rice and pasta

Seems like everyone has been jumping on the cauliflower rice option, zucchini noodles are a great substitute for pasta as well!
Depending on your reason for cutting down on carbs, you could look into things like couscous and quinoa to replace rice as well, you can make great fried quinoa with your favorite fried rice recipe by replacing the rice with quinoa. These grains do have carbs in them but from my (limited) understanding they are generally not the types of carbohydrates people are trying to cut down on.
Though difficult, the best way to cut carbohydrates is probably to forgo the binders (rice, pasta, and substitutes) entirely. Protein and roasted vegetables on the side is a great meal and usually pretty easy to prepare in bulk.

I'm going to echo the cauliflower rice recommendation. It's AMAZING. Here's an easy, really tasty idea. Get a bag of frozen cauliflower rice. Empty the bag into a microwave safe dish and cover and cook for the recommended time (usually about 6 minutes). Then, when it's done, let it sit for a minute, then empty into a casserole dish or a large glass bowl. Get some salsa of your liking and then dump some in (I'd say, 1 part salsa for 3 parts cauliflower rice). Mix it. Then, sprinkle in a bit of parmesan or romano cheese (being harder cheeses, they do better with this). Then mix that, pop the mixture into the microwave for a minute. What you basically have is a no-carb mexican or spanish rice dish that tastes incredible and is both very low calorie AND low carb. Filling, healthy and delicious. You can also add some sliced chicken. Best of all, it's very easy to prepare and quick. This is one of my go-to meals at least twice a week. Enjoy....

I'm currently on a diet where I only eat meat veggies and fruit. The best classic recipe I've found so far that is near 0g carbs is a simple no-bean chili with ground beef, tomato sauce, diced tomatoes, and chili powder. I also add tomato paste for a richer sauce.

I did a ketogenic diet for 9 months as a personal challenge. Oftentimes i found myself just eating protein and vegetables for dinner. Any cabbage-type vegetable (cabbage, Brussels sprouts, broccoli, cauliflower, asparagus, kale, collard greens, etc...) are lowest in carbs. You can also find substitute recipes using cauliflower in a myriad of ways, from pizza crust to risotto to cauliflower cheese muffins, etc....

jkiemeleHow did you like it? I did it as well for a similar time frame and really found it enjoyable. Although I wouldn't recommend anyone do it "permanently"

MikeMDI liked it and did it mostly for a cooking challenge, forcing myself to look at ingredients in a new way. I could not do it permanently because there are some things I love too much and there is no viable substitution. Even so, I'd recommend it to anyone.
Look up cauliflower rice. Spaghetti squash is in season. There's also shredded tofu.
Rice comes in other forms. With rice starch you can make scallion pancakes. Rice noodles come in various sizes, from thin vermicelli to wide flakes. I use those for Pad See Ew.
There are also tapioca and buckwheat noodles. Buckwheat noodles are awesome in a cold summer soup (look up Naengmyeon). There's also green bean and mung noodles; you may have seen them in translucent "glass" form.
Consider other grains. Barley, millet, farro, buckwheat. Buckwheat flour is a classic ingredient for savory crepes so you can make crepes or burritos of a sort.
