What is the best meat when making spaghetti carbonara?

guanciale>pancetta>bacon
Some people say it's pork cheek, but the original recipe involves bacon. You beat the eggs, add some Pecorino cheese, a pinch of salt and a pinch of pepper. That's all it takes to make the real carbonara ;). (Obviously you need to add the cubed and cooked bacon after you added your spaghetti to the eggs)

i like to use pancetta sometimes... and like you said, eggs, salt, pepper, cheese... real carbonara is that simple

Yeah, i meant pancetta but being italian i tried to translate that and "guanciale" because i don't really know how different cuts of meat are called in english
