I have a dedicated spice rack above my oven (Make out of electrical wire and a broken cutting board) solely for cooking Kitchari (Protein- and carbohydrate-rich kitchari, made of yellow mung dal and basmati rice along with spices and ghee, is used as a cleansing food in Ayurveda.)
See my version of the recipe below;
Ingredients
2 Tbsp Coconut Oil ghee or organic sesame oil 1 cups yellow mung dahl beans 1 cup uncooked white basmati rice 4 cups water
2 tsp black mustard seeds 1/8 teaspoon asafoetida 2 tsp cumin seeds 1 tsp fennel seeds 2 tsp ground turmeric 2 tsp ground black pepper 1 tsp ground cumin 1 tsp ground coriander
1 cup chopped fresh cilantro (Added after cooking) 1 Avocado (Added after cooking) 1 Tbsp minced ginger (Added after cooking) 3 cloves garlic (Added after cooking) Salt, pepper, and brewer's yeast to taste. (Added after cooking) Sauerkraut
Add coconut oil to pan on medium heat, all dry spices/seeds until popping and smelling slightly toasted. Add split mung beans and rice dry to mixture and roast another 1-2 minutes (make sure nothing burns). Add water and cook like you would rice.
When fully cooked, add Cilantro, Avocado, Ghee, Ginger, Garlic, salt, pepper, brewers yeast, and Sauerkraut to taste. Serve hot.
