Certainly not for "burn-in" purposes, but my favorite song to play when I first get a new pair of headphones or piece of audio equipment period, is Pink Floyd's Comfortably Numb. It has what is probably my favorite guitar solo of all, still gives me chills at times. There are probably other songs that I run through(and can't think of at the moment) as well, based on what I'm feeling maybe, or whatever else in my collection that I think is of similarly high audio quality...but Comfortably Numb is always my go to.
Edit: I should add, a possibly lesser known band, but that certainly have quite a few songs I like to listen to, would be Ozric Tentacles. Their songs often have quite a bit going on as they're all instrumental and are in the Space/Psychodelic Rock genre, and even sometimes have quite the live feel to them...seems to me at least that audio quality matters to them. Also if you like Hawkwind, and haven't heard of the Ozrics, then you'll probably like them.
