We're doing a Jerk Seasoned Turkey this year. It starts out with a three day soak in a brine followed by a rub mixed with butter and then in the convection oven. We thought about smoking the turkey but we want the drippings for gravy.
Heres the recipe I used for the brine: 1.5 Cup Kosher Salt 1.5 Cup Brown Sugar 4 Quarts Chicken Broth 2 Tablespoon Hickory Smoke Flavor (unless you decide to smoke the turkey) 2 Cups White Vinegar 1 Cup Lime Juice 1 Cup Minced Green Onion (or white onion) 8 Minced Garlic Cloves 4 Tablespoons Thyme 4 Tablespoons Crushed Allspice Berries 4 Tablespoons Garlic Powder 2 Tablespoons Cayenne Pepper 2 Tablespoons Sage 1 Tablespoon Peeled & Grated Ginger 1 Tablespoon Nutmeg 1 Tablespoon Ground Cinnamon Added everything to a large stock pot and brought to a boil then added 8 Minced Scotch Bonnet Peppers after brine was brought to boil
Once the brine was cooled off, I put the turkey in a large bucket, added the brine and topped off with water so it was completely submerged and now its in the refrigerator.
I am just going to use a pre-mixed dry jerk seasoning rub mixed with some soft butter to coat the turkey before it goes in the oven and then just roast like usual. The rub is Busha Browne Jerk Seasoning Rub that I got off Amazon.

CampCatskillI just want to point out that all this flavoring is lovely, but for newbie, just using salt will kick up the quality of your turkey meet about 120%. Turkey tastes great on it's own; it doesn't need all that frou-frou imo.

kitINstLOUISIt’s jerk seasoning, a style of cooking native to Jamaica. Not frou-frou. While salt totally ramps up the flavor, it’s fun to try different methods.
