I'd like to suggest getting a wusthof clasic ikon knife set to anyone buying. bit expensive but are by far the best knives i've ever used or owned.

WonderbrowI might do that some day, but most consumers can also experience a Wusthof first hand by going to their local knife shop or big box store. Williams-Sonoma, Sur-La-Table, and other places like that. Usually I try to include knives in passarounds that most people wouldn't have the opportunity to try otherwise.

WonderbrowYou should check out KnivesAndStones (http://www.knivesandstones.com/) near Sydney if you ever get a chance. They have an excellent selection of knives and the owner, James, is a great guy.

FriedShoeThat might be true for most of the common wusthof knives, but try finding a Chinese Chef's Knife in stock anywhere... at least in Tucson I've yet to find anyone who stocks it. https://www.wuesthof.com/germany/products/Product-details/chinese-chef-s-knife-4686-18

Wonderbrowthen you must try a simple Gyoto with a vg10 blade, a simple inexpensive starter japanese blade. Once you use a thin blade with a wa handle you cannot go back to a wustoff. Wustoffs to me are like cutting with a chisel. A shaped handle forces you to hold the knife too far back...again just my opinion.
