So I'm building another gaming/streaming rig and I am in a debate between going with an EVGA FTW3 1080 ti or buying a founders edition card and water cooling with EK's Fluid Gaming Kit. Running and i7 8700, 32 GB TridentZ 3200. I would add the CPU into the loop with the EK kit or run a closed looped AIO if I went with the FTW3. All in a Corsair Air 740. Which option do you guys think would be ideal?

Custom watercooling all the way if you have the budget and time. When it comes to cooling for gpu water is always better than air. Since you are at it get liquid metal or better thermal compound
